Ingredients (2–3 servings): • 750 g boiled potatoes, sliced (≈ 1.6 lb) • 150 g bacon, diced (≈ 5 oz) • 1 onion, finely chopped • 4–5 eggs • 2–3 tbsp clarified butter (Butterschmalz) • Salt, black pepper • Parsley How it’s made: 1️⃣ Heat a pan with butter. 2️⃣ Fry potatoes first — hot, golden, crispy. Don’t rush. 3️⃣ Add bacon, no extra fat. 4️⃣ Add onions briefly, keep them light. 5️⃣ Pour in eggs, gently fold.
